Brownies may be the OG edible, but cookies are holding their own. What’s your favorite cannabis-infused treat? Drop it below so we can all get baked… in the kitchen.
- 1 cup cannabutter (softened)
- 1 cup creamy peanut butter
- 1 cup brown sugar
- 1 cup white sugar
- 2 large eggs
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 ½ tsp baking soda
- ½ tsp salt
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together cannabutter, peanut butter, and both sugars until fluffy. Add eggs one at a time.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt. Slowly mix into the wet ingredients.
- Roll dough into 1-inch balls, place on sheets, and press with a fork in a crisscross pattern.
- Bake 8–10 minutes, until edges start to brown. Cool 5 minutes before moving to a rack.
- If your cannabutter is potent, swap half with regular butter for a lighter batch.
- Test with one cookie before you go in for seconds.
- Store in an airtight container for a week — or freeze for the future munchies.
